For successful sweet making, you must have a candy thermometer. A lot of the success in making great sweets is the temperature, it can make or break the results and if you are new at this, then the best possible advice is to purchase a book about how to make sweets.
On a vastly different level, factory made sweets go through a very strict process. To begin with, the quantities are much larger of course than those that you would use at home obviously. The methods and ingredients, though on a larger scale are the same. The ingredients are carefully measured and brought to a boil, once it reaches a certain temperature, thus the candy thermometer; it is called a hard crack, and is then removed from the heat and poured onto a cast iron table that is cooled with water. It naturally spreads when poured. After leaving this for a while, it is turned then placed into a sugar boiler where the flavourings and other ingredients are added; these are mixed and kneaded until everything is dissolved. As the process continues, the mixture becomes a long strip, which is eventually cut into individual candies. Of course, they then go down the conveyor belt to be wrapped, packaged and distributed. Homemade candy making goes through similar a process but on a mini scale and if you want to get serious about how to make sweets, a factory tour is always a great idea. Most sweet factories give tours. Then they kindly introduce you to their shop at the end of the tour, many times you will get a goody bag with some samples of the sweets you witnessed being made.
To make fancy sweets is a bit of an art, but making fudge is easy and the recipes are many. This might be a good place to start if you are a novice. There are many recipes available for candy making; it can be fun and fulfilling, literally. Candy is best made on a cool dry day as sugar pulls moisture from the air and cooking time will increase and if it sets at all set up may be longer, and the moisture may turn it into syrup.
